Remember that the collards cook down a significant amount so you need to make sure to prepare enough for everyone. Standard is about 4 medium size leaves per person.

Ingredients:
25-30 collard green leaves
1 onion
Coconut or vegetable oil
Directions:
Finely chop an onion and cut greens about ¾ inch thick and sauté in a small amount of cooking oil.
Other seasonings (salt, pepper) may be added as you desire, but make sure you are aware of everyone’s eating habits and preferences.
